It starts with two individuals, Mark Fenske and Tom Boucher, both drawn to the vibrant and welcoming atmosphere of the restaurant industry. In 1984, this passion culminated in the opening of T-BONES Great American Eatery in Salem, NH, a classic eatery offering comfort food in a warm and family-friendly setting.
Tom Boucher’s journey with GNH began in 1986 when he took a summer job as a food server at the Hudson T-BONES location. This “holiday break” job turned into a lifelong commitment as Tom fell in love with the restaurant business, ultimately forgoing graduate school to pursue this newfound passion.
Over the years, GNH steadily grew, adding new concepts like CJ’s Great West Grill, a Southwestern restaurant in Manchester (1995), and expanding the T-BONES brand to Derry (2004) and Laconia (2007). The Laconia location holds a special place in GNH history, being the first “dual concept” restaurant in New Hampshire, featuring both T-BONES and Cactus Jack’s Grill & Watering Hole under one roof.
